The Seven Sages are each named after a town from The Adventure of Link (or the towns were named after them; the events in TAL happened after OOT according to Nintendo) Here is a list of each Sage, their race, and the Temple they correspond to:

 

Light (Time)- Rauru [Hylian]

Forest- Sara [Kokiri]

Fire- Darunia [Goron]

Water- Princess Ruto [Zora]

Spirit- Nabooru [Gerudo]

Shadow- Impa [Sheikah]

The Seventh Sage- Zelda [Hylian]
